The light and refreshing desserts I enjoy in the heat of summer are very different from the warm and comforting desserts my body craves during the cold of winter. There are all sorts of recipes that are perfect 'winter' desserts, but puddings are particularly well suited for this time of year. Containing the most basic of ingredients (milk, sugar, eggs, flour, fruit and/or spices) their simple flavors satisfy our need for nostalgic foods. And who wants to drive around town on a dark night trying to find some exotic ingredient for a complicated dessert when making a creamy smooth pudding will more than suffice.

The British sometimes use the word 'pudding' to mean any sweet dessert. But if we put that meaning aside, Webster's' Dictionary defines 'pudding' as a thick, soft dessert, typically containing flour or some other thickener (cornstarch, rice, tapioca), milk, eggs, a flavoring, and sweetener. Sweet puddings range from milk based to custard based and can be steamed, cooked on the stove (sometimes in a double boiler) or in the oven (usually in a water bath). The trick is to cook them slowly to prevent curdling so the end result is a soft and creamy dessert that can be eaten hot, if you can't wait, or cold, if you can.
