Summer brings us so many things; warm weather, vacations, grilling, and a steady supply of fresh fruits. I love how every time I go to the grocery store or market there is another fruit at its peak which means quality is high and prices are reasonable. If you are lucky to live in an area that grows some of the produce you see in your big chain grocery store, you may want to try going to a u-pick or a farmer's market to help support your local growers.  

If you are a regular to the site you know that I love berries. And since summer is their main harvest time, this is when we get to use them with abandon. At first you may just want to serve them raw in a Berry Parfait or Fruit Salad, or maybe to decorate the top of a cake, or in a Fruit Tart, Pavlova, Graham Cracker Tart, Blackberry Tart, or to make the ever popular Strawberry Shortcake or Berry Shortcake. But once you have your fill, why not try baking with them. If you like blueberries, start your day with Buttermilk Berry Muffins, Blueberry Bran Muffins, Blueberry Streusel Muffins, or Blueberry Streusel Scones.  For dessert there is a Blueberry Cake, or a Blueberry Tart which uses both cooked and raw blueberries. For the raspberry lover there is a Raspberry Cream Cheese Tart, a delicious Raspberry Truffle Tart, or the beautiful Raspberry Tart which has concentric circles of raspberries encased in a buttery pastry. And, of course, there are juicy and sweet tasting Bing cherries that are wonderful in either the Cherry Clafoutis or the Cherry Cake. Another idea is to make the ever popular Peach Cobbler or the Blackberry Rhubarb Crisp. Pies are always a summer favorite, so you may want to try a Blueberry Pie, a Strawberry Rhubarb Pie, or a Key Lime Pie.

Lastly, there is a whole section of Ice Cream Recipes. There are recipes for the all time favorites like Vanilla Ice Cream, Chocolate Ice Cream, and Strawberry Ice Cream. Children would also love the cute looking Watermelon Bombe, Frozen Fruit Pops, or Ice Cream Sandwiches.

Ganache

Royal Icing was traditionally used to ice Wedding and Christmas cakes. It consists of powdered (icing or confectioners) sugar, egg whites or meringue powder, and water. more

Shortbreads are traditionally a Christmas cookie that blends butter, sugar, and flour to make a rich and delicate tasting cookie. more

Ganache is a French term referring to a smooth mixture of chopped chocolate and heavy cream. more

Loaded with oats, this version produces a crisp and chewy cookie that can be filled with chocolate chips (white or dark chocolate), dried fruits, and/or chopped nuts. more

Cream Scones have a lovely crisp crust with a rich buttery flavor and light and fluffy texture. They are delicious cut in half and served with Devonshire Cream and either jam or lemon curd. more

A perfect biscuit, in my mind, should have a golden brown crusty top and bottom and when you split it in half it should be soft and flaky and moist enough to absorb a pat of butter, which is absolutely necessary. more

Pavlova Yellow Butter Cake

Pumpkin Pie

This meringue cake, with its unusual soft sweet marshmallow center and crisp crust is produced by folding a little vinegar and cornstarch into the stiffly beaten egg whites and sugar. more This Yellow Butter Cake has two moist and buttery cake layers that are filled and frosted with a delicious chocolate frosting. more

My personal favorite pumpkin pie recipe is this Pate Brisee recipe, as I like its' wonderful buttery flavor and crumbly texture. more
